Baked Pumpkin
4 tb Butter or margarine
2 c Pumpkin (canned or fresh)
1/2 c Flour
1 pn Salt & baking soda (ea.)
1 c Sugar
1 c Milk
2 Eggs
1 ts Vanilla
Cinnamon sugar (or just cinnamon) for topping
Put the butter in a dish or pan measuring
8x8, 9x9, or 7x11; melt while heating the oven to 450 degrees F. Put remaining
ingredients in blender and whirl until smooth. Pour into the melted butter and
sprinkle top with cinnamon (or cinnamon-sugar). Bake for 25-30 minutes. Serve as
a side dish.
Baked Sweet Potatoes
1 large unpeeled sweet potato, thickly sliced
1/2 cup apple juice
1/2 teaspoon ground cinnamon
Preheat the oven to 400 degrees F. Place the sweet
potatoes, apple juice and cinnamon in an 8-inch by 8-inch pan. Cover with foil.
Bake for 20 to 25 minutes, or until sweet potatoes are soft.
Serves 4.
Good gravy
For extra special Thanksgiving gravy, add a splash of sherry
or a drizzle of brandy.
A tip for never-fail gravy, very easy to make in the microwave oven: in a one
quart or one litre glass measure, stir three tablespoons of fat from turkey
drippings, or three tablespoons of butter, with three tablespoons of flour.
Gradually stir in two cups of turkey or chicken broth. Cook on high for six to
nine minutes until boiling and thickened. Stir twice during this cooking period.
Add pepper and salt to taste and a little browning sauce if desired.
