Good gravy

For extra special Thanksgiving gravy, add a splash of sherry or a drizzle of brandy.
A tip for never-fail gravy, very easy to make in the microwave oven: in a one quart or one litre glass measure, stir three tablespoons of fat from turkey drippings, or three tablespoons of butter, with three tablespoons of flour. Gradually stir in two cups of turkey or chicken broth. Cook on high for six to nine minutes until boiling and thickened. Stir twice during this cooking period. Add pepper and salt to taste and a little browning sauce if desired.
